Production and usage of cow’s milk in 2010

In 2010 about 534 000 (+0.3% compared with the previous year) dairy cows were kept in Austria. The average annual yield of milk per animal increased to 6 100 kg (+0.5%), the overall raw milk production amounted to 3 258 000 tons (+0.9%).

The majority of the raw milk produced by cows, namely 85.4% or 2 781 000 tons (+2.7%), was provided to manufacturing enterprises. The remaining raw milk – apart from waste - was used on the farms: 9.3% or 304 000 tons was fed to calves and other domestic animals, 4.3% or 140 000 tons was used for human consumption.

Production and usage of sheep’s milk in 2010

In 2010 about 22 500 (+0.3% compared with 2009) dairy sheep produced almost 9 500 tons of raw milk which accounted for an average annual milk yield of 420 kg per sheep. 68.5% or 6 500 tons of the total raw milk was used for human consumption either directly or in processed form. 30.5% or 2 900 tons of the raw sheep’s milk produced was used for other purposes, for example as feedstuff; the remainder was waste (1%).

Production and usage of goat’s milk in 2010

Some 30 200 dairy goats (+7.0% compared with 2009) yielded 18 700 tons of raw milk, corresponding to an average annual milk yield of 620 kg per goat. 80.6% or 15 100 tons of total raw milk was intended for human consumption only; the remaining raw milk was otherwise used (18.4%; including the manufacturing of cosmetics) or was recorded as waste (1%).

Methodological notes

The milk statistics determine the raw milk yield of the previous calendar year and provide results relating to the milk used for human consumption or as a feedstuff. The data also forms the basis for further calculations, for instance in conjunction with Supply Balance Sheets or the Economic Accounts for Agriculture.

The survey of the overall raw milk yield and its use for human consumption is conducted in accordance with the criteria and definitions of the Commission Decision of 18 December 1996 laying down provisions for the implementation of Council Directive 96/16/EC. The statistics for milk production and use is provided annually by Statistics Austria in co-operation with the national chambers of agriculture, relevant professional associations and the Agrarmarkt Austria (AMA).
